Ingredients

  • 1 lb boneless chicken breast (Cut into bite-sized strips)
  • 4 tbsp oil (Olive oil is used for cooking the chicken and vegetables)
  • 12 oz spaghetti
  • 1 tbsp salt (For boiling the spaghetti)
  • 1 cup cabbage
  • 1 cup carrots (Julienned)
  • 1 green bell pepper (Sliced)
  • 0.5 batch green onions (Some are used in the vegetables and some are chopped for garnish)
  • 2 tbsp garlic (Minced)
  • 1 red onion (Sliced)
  • 5 tbsp light soy sauce (For the chow mein sauce)
  • 3 tbsp oyster sauce (For the chow mein sauce)
  • 1 chicken bouillon cube
  • 1 tbsp brown sugar (The method calls this granulated sugar; the ingredient list specifies brown sugar)
  • 1 tbsp red chili flakes (Optional)
  • 1 tbsp cornstarch
  • 2 tbsp lemon juice
  • 5 tbsp ketchup
  • 1 tbsp black pepper (For the sauce; additional pepper is used to marinate the chicken)
  • salt (To taste for the sauce and chicken marinade)
  • pepper (For marinating the chicken)
  • 0.5 cup starchy pasta water (Reserved before draining the spaghetti)
  • sesame seeds (For garnish)

Steps

  1. 1

In a small mixing bowl, whisk together the oyster sauce, brown sugar, light soy sauce, chicken bouillon cube, ketchup, black pepper, red chili flakes, lemon juice, and cornstarch. Set the sauce aside.

  2. 2

Bring a pot of water to a boil and add 1 tablespoon salt. Add the spaghetti and boil until cooked. Before straining, reserve 1/2 cup of the starchy pasta water.

  3. 3

Strain the spaghetti, wash it with cold water, and set it aside.

  4. 4

Cut the chicken breast into bite-sized strips. Marinate the strips with salt and pepper.

  5. 5

Heat some of the oil in a pan. Add the chicken strips and cook until golden brown. Remove the cooked chicken from the pan and set it aside.

  6. 6

Heat the remaining oil in a wok. Add the minced garlic and all the vegetables: cabbage, carrots, green bell pepper, green onions, and red onion.

  7. 7

Sauté the garlic and vegetables for a few minutes, until the vegetables are slightly softened.

  8. 8

Add the cooked chicken and spaghetti to the wok with the vegetables.

  9. 9

Add the reserved starchy pasta water, then pour the prepared sauce over the top.

  10. 10

Continue cooking all the ingredients together for another 2 minutes, stirring so the sauce coats the chicken, noodles, and vegetables.

  11. 11

Garnish the chow mein with chopped green onions and sesame seeds. Serve hot.

Notes

The source does not specify the spaghetti boiling time, exact cooking temperature, or the quantity of sesame seeds used for garnish. The sauce ingredient list specifies brown sugar, while the method says granulated sugar.
