Ingredients
- 370 g Strong bread flour
- 7 g Active dry yeast (Equivalent to 1 sachet.)
- 160 ml Whole milk (Lukewarm, approximately 38 °C.)
- 50 g Sugar
- 1 Egg (Size L, at room temperature.)
- 65 g Unsalted butter (Very soft and spreadable; for the dough.)
- 70 g Unsalted butter (Very soft and spreadable; for the filling.)
- 110 g Brown sugar (Or panela sugar.)
- 2 tbsp Ground cinnamon (Heaped.)
- 60 ml Heavy cream (35% fat, lukewarm.)
- 100 g Cream cheese (For the frosting.)
- 40 g Butter (Softened; for the frosting.)
- 1 tsp Vanilla extract (For the frosting.)
- Powdered sugar (Optional; the author did not add it.)
Steps
- 1
Mix the lukewarm milk with the active dry yeast in a bowl. Let it stand for 10 minutes to activate the yeast.
- 2
Add the egg, flour, and sugar to the milk and yeast mixture. Knead to combine the ingredients.
- 3
Gradually incorporate the 65 g of softened butter and continue kneading until you have a smooth, uniform, and elastic dough.
- 4
Cover the dough and let it rise in a warm place for 1 to 1 1/2 hours, until doubled in size.
- 5
Roll out the dough with a rolling pin into a rectangle.
- 6
Spread the 70 g of softened butter over the entire surface of the dough.
- 7
Mix the brown sugar with the cinnamon and sprinkle the mixture over the butter.
- 8
Cut the dough into similarly sized portions and roll each portion to form the rolls.
- 9
Place the rolls on a baking tray and let them rest for 30 to 40 minutes.
- 10
Just before baking, pour the lukewarm cream over the rolls.
- 11
Bake at 180 °C for 20–22 minutes, until golden brown.
- 12
While the rolls are still warm, beat the cream cheese, the 40 g of softened butter, and the vanilla until smooth and creamy.
- 13
Spread the frosting over the warm rolls. If desired, add powdered sugar, although the author did not use it.
