Ingredients

  • 0.5 cup unsalted butter (melted and cooled)
  • 0.5 cup light brown sugar
  • 0.333 cup granulated sugar
  • 1 large egg (at room temperature)
  • 1 tbsp vanilla extract
  • 1 cup all-purpose flour (spooned and leveled)
  • 0.25 cup cocoa powder
  • 0.5 tsp baking soda
  • flaky sea salt (a pinch for the dough, plus more for sprinkling after baking)
  • 1 cup semi-sweet chocolate chips

Steps

  1. 1

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. 2

In a medium bowl, whisk together the all-purpose flour, baking soda, and a pinch of flaky sea salt. Set the dry mixture aside.

  3. 3

In a large bowl, combine the melted and cooled butter, light brown sugar, and granulated sugar. Whisk for 1–2 minutes, until the mixture forms a smooth paste.

  4. 4

Crack the room-temperature egg into the butter-and-sugar mixture. Whisk until fully incorporated.

  5. 5

Add the vanilla extract and whisk until combined. Add the cocoa powder and mix until incorporated.

  6. 6

Gradually add the dry ingredients to the wet ingredients. Gently fold until just combined; do not overmix.

  7. 7

Add the semi-sweet chocolate chips and stir them in with a spatula, taking care not to overmix the dough.

  8. 8

Scoop the dough into 9 equal portions onto the prepared baking sheet, leaving approximately 2 inches of space between portions. Use no more than 4 cookies per 15-by-10-inch baking tray because the cookies spread during baking.

  9. 9

Bake for 12 minutes, or until the edges are golden and crispy while the centers remain gooey.

  10. 10

Remove the cookies from the oven and immediately sprinkle them with flaky sea salt. Allow them to cool completely on the baking sheet before serving. Serve warm or at room temperature.

Notes

Use a room-temperature egg for better texture. Avoid overmixing to preserve the cookie texture, and leave enough space between cookies as they spread. Store in an airtight container at room temperature for up to 3 days; the source also states that the cookies can be frozen for longer storage but does not provide a specific freezing duration or method.
