Ingredients

  • 200 g Cream cheese
  • 1 Onion (Leave unpeeled for roasting; remove the tough outer skin after baking.)
  • 1 cabeza Garlic (Cut off the top of the head before roasting.)
  • 1 tbsp Fresh parsley (Chopped.)
  • Olive oil (As needed for roasting and finishing the dip.)
  • Sesame seeds (As needed for garnish.)
  • Salt (As needed, to taste.)
  • Black pepper (As needed, to taste.)
  • Toast (For serving; the quantity is not specified in the source.)

Steps

  1. 1

Preheat the oven to 190–200 °C. Prepare a sheet of aluminum foil large enough to wrap the vegetables.

  2. 2

Place the garlic head on the aluminum foil and cut off the top to expose the cloves. Add the onion and drizzle both vegetables with olive oil; season with salt and pepper.

  3. 3

Close the aluminum foil to form a packet and bake for approximately 35 minutes, or until the onion and garlic are soft and golden. The garlic should be easy to squeeze out, and the onion should be tender.

  4. 4

Remove the packet from the oven and let the vegetables cool enough to handle. Remove the tough outer skin from the onion.

  5. 5

Mash the roasted onion until smooth or slightly rustic, depending on the desired texture.

  6. 6

Squeeze the roasted garlic cloves to extract the pulp and add it to the mashed onion.

  7. 7

Add the cream cheese and chopped parsley. Season again with salt and pepper, and mix until fully combined and creamy.

  8. 8

Transfer the dip to a serving bowl. Drizzle a little olive oil over the top and finish with sesame seeds.

  9. 9

    Serve immediately with toast.

Notes

The source indicates olive oil, sesame seeds, salt, and pepper as needed. For a more festive presentation, serve the dip warm or at room temperature with crisp toast.
