Weights are estimates. Together, the ingredients weigh about 135 g before cooking, which is about 17 g per serving.
Steps
Sift the milk powder and cocoa powder directly into a bowl. Mix the two dry ingredients until you have an even-colored, lump-free base.
Add 3 tablespoons of the very hot coffee to the dry mixture. Stir vigorously with a spoon or small spatula to begin hydrating the milk powder.
Continue adding the hot coffee gradually, stirring after each addition, until the mixture comes together. Stop when it forms a shiny, heavy, velvety paste with the consistency of a thick spoonable brigadeiro. If necessary, add more coffee gradually, including half a tablespoon at a time.
For a sweeter result, mix the granulated sweetener into the mixture until fully incorporated.
Cover the bowl with plastic wrap pressed directly against the surface of the mixture. Refrigerate for 20 to 30 minutes, until chilling firms up the brigadeiro enough to shape.
Lightly moisten the palms of your hands with filtered water or a drop of coconut oil to prevent the mixture from sticking.
Divide and shape the mixture into balls. Roll each brigadeiro in the dark chocolate sprinkles, cocoa powder, or cacao nibs, according to your preference.
Notes
The coffee needs to be very hot: the heat hydrates the milk powder and helps create the shine and velvety texture without cooking the mixture. The recipe can be eaten as a spoonable brigadeiro or rolled into balls after resting in the refrigerator.
