Ingredients
- 1 onion (chopped)
- 2 chicken breasts (cut into small cubes)
- 1 tsp paprika
- 0.5 tsp black pepper
- salt (to taste)
- 1 tbsp butter
- 1 tbsp oil
- 3 garlic (minced)
- 1 tsp Italian seasoning
- 1 cup white rice
- 2 cup chicken broth or stock (or enough to cover the rice in the pot)
- 0.5 cup cooking cream
- 2 tbsp grated Parmesan
- fresh coriander (for garnish)
- cherry tomatoes (optional; for garnish)
Steps
- 1
Peel and chop the onion. Cut the chicken breasts into small cubes.
- 2
Place the cubed chicken in a bowl. Season it with the paprika, black pepper, and salt, then toss well to coat.
- 3
Heat the oil and butter in a pot over medium heat.
- 4
Add the chopped onion and sauté until soft.
- 5
Add the seasoned chicken and cook, stirring, until browned.
- 6
Add the minced garlic and Italian seasoning. Cook for about 1 minute, until fragrant.
- 7
Add the white rice and pour in the chicken broth or stock, using enough liquid to cover the rice in the pot.
- 8
Bring the mixture to a boil. Cover the pot, lower the heat, and cook until the rice absorbs the liquid.
- 9
Add the cooking cream and grated Parmesan. Stir well to combine.
- 10
Garnish with fresh coriander and, if desired, cherry tomatoes.
Notes
The source does not specify exact cooking times for browning the chicken or cooking the rice, nor a precise heat level beyond lowering the heat after boiling. The broth amount may be adjusted so the rice is covered.
