King Oyster Mushroom Beef Steak

Ingredients
- 4 King oyster mushroom (Large)
- 160 g Beef top round/eye of round (bulgogi cut) (Lean cuts)
- 4 Rice paper
- 35 g Pizza cheese (mozzarella) (Approx. 30-40g)
- Salt and pepper (A pinch)
- 2 tbsp Unsweetened yogurt (For sauce)
- 0.25 tsp Wasabi (1/4~1/2 tsp, adjust to taste)
- 1 tsp Soy sauce (For sauce)
- 0.5 tsp Honey (For sauce)
- 1 tsp Lemon juice (Or vinegar)
- Cooking oil (For frying)
- 50 ml Water (For steam-cooking)
- Black pepper (For garnish)
- Chives (For garnish, optional)

Bring water to a boil in a pot and blanch the 4 king oyster mushrooms for about 5 minutes. (Alternatively, cover with plastic wrap and microwave at 600W for 40 seconds.)

Remove the blanched mushrooms and let them cool slightly. Slice them thinly by rotating the knife (peeling cut) to flatten them out. Lightly score the surface to ensure even cooking.

Dip the rice paper in cold water to soften it, then lay it flat on a cutting board.

Layer the ingredients on the rice paper in this order: beef, flattened king oyster mushroom, pizza cheese, and another layer of beef.

Fold all four sides of the rice paper to wrap the contents tightly. Placing the wraps on a damp paper towel can help prevent the rice paper from tearing.

Heat a small amount of oil in a frying pan and place the wraps folded-side down. Pan-fry for about 1 minute until the surface is golden brown.

Pour 50ml of water into the pan and immediately cover with a lid to steam-cook (braise) the inside thoroughly.

Once the meat is cooked, remove the lid and allow the remaining moisture to evaporate. Continue frying until both sides are crispy and golden.

In a small bowl, combine the unsweetened yogurt, wasabi, soy sauce, honey, and lemon juice. Mix well to make the wasabi yogurt sauce.

Place the finished steaks on a plate, drizzle with the sauce, and garnish with black pepper and chopped chives.
Notes
The wasabi sauce can be omitted for children or those who prefer mild flavors. At approximately 205 kcal per steak, it is very light. Serving two steaks with 100g of rice and a vegetable soup makes for a perfectly balanced diet meal.
