  • 150 ml Evaporated milk (For the Strawberry and Banana flavor)
  • 1 unidad High-protein drinkable yogurt (For the Strawberry and Banana flavor)

  • 1 unidad Caramel pudding (For the Salted Caramel flavor)
  • 0.5 scoop Custard casein (For the Salted Caramel flavor)

Steps

  1. 1

Select the combination of ingredients for the desired flavor from the provided list.

  2. 2

In an ice cream maker-safe container (such as Ninja Creami pints), mix all the liquid and solid ingredients corresponding to your chosen flavor.

  3. 3

Add the 'magic excipients': a pinch of xanthan gum or guar gum and a pinch of salt to improve the final texture and prevent crystallization.

  4. 4

Mix well with a hand whisk or milk frother until the mixture is homogeneous and no lumps of protein or cocoa remain.

  5. 5

Close the container and freeze for at least 24 hours to ensure the base is completely solid.

  6. 6

Remove the container from the freezer and insert it into your ice cream machine (e.g., Ninja Creami).

  7. 7

Select the 'Ice Cream' or 'Lite Ice Cream' program according to your machine's instructions.

  8. 8

If the texture is powdery after the first cycle, add a splash of milk or plant-based drink and use the 'Re-spin' function.

  9. 9

For flavors like pistachio or caramel, you can add additional toppings or creams after the first spin and use the 'Mix-in' function to integrate them.

  10. 10

Serve immediately to enjoy the best creamy texture.

Notes

The 'magic excipients' (xanthan gum and salt) are crucial for ensuring protein ice creams do not turn into a block of ice. If you do not have a Ninja Creami-type ice cream maker, you can try whisking the mixture every 30 minutes while it freezes, although the result will not be as creamy.
