Ingredients

  • 250 g mascarpone
  • 100 g shredded coconut (desiccated coconut)
  • 200 g milk chocolate (melted)

Steps

    In a bowl, combine the 250g of mascarpone and 100g of shredded coconut.

    Mix the ingredients together thoroughly using your hands until well combined.

    Take small pieces of the mixture and roll them into small balls (popcorn-sized).

    Place the coconut balls in the freezer for 15 minutes to firm up.

    Melt the 200g of milk chocolate using a double boiler or microwave.

    Dip the chilled coconut balls into the melted chocolate until fully coated.

    Place the coated balls in the refrigerator until the chocolate hardens completely.

Notes

These are best stored in the refrigerator to keep the mascarpone filling firm and the chocolate coating crisp.
