Ingredients
- 5 small heads garlic (tops sliced off; roast until soft)
- 2 tbsp olive oil (plus a drizzle over the roasted garlic)
- 8 oz cream cheese (softened; 1 block)
- 1 cup plain Greek yogurt
- 0.25 cup mayonnaise
- 1.25 cup shredded mozzarella cheese (use 1 cup in the dip and reserve the remainder for topping)
- 1.25 cup Parmesan cheese (use 1 cup in the dip and reserve the remainder for topping)
- 0.25 cup parsley (chopped; some is reserved to top the dip)
- 0.5 tsp garlic powder
- 0.5 tsp salt
- garlic bread dippers, crostini, toasted baguette, or chips (for serving; choose one or more)
Steps
- 1
Preheat the oven to 425°F (220°C). Slice the tops off the garlic heads to expose the cloves, removing the cut-off tops.
- 2
Drizzle the garlic with the olive oil, wrap the heads in foil, and place them in the oven. Bake for 45 minutes, or until the cloves are soft.
- 3
Let the roasted garlic cool for at least 15 minutes before handling. Reduce the oven temperature to 350°F (175°C).
- 4
In a large bowl, beat together the softened cream cheese, Greek yogurt, and mayonnaise until combined.
- 5
Squeeze the roasted garlic cloves out of each head into the bowl, then mix them in well.
- 6
Add 1 cup of the mozzarella, 1 cup of the Parmesan, the chopped parsley, garlic powder, and salt. Stir until well combined.
- 7
Pour the mixture into a small baking dish (an 8-by-8-inch dish will work). Top with the remaining mozzarella and Parmesan, then add a little more parsley.
- 8
Bake at 350°F (175°C) for 20 minutes. Broil for 3–4 minutes until golden brown, keeping a close eye on the dip to prevent burning.
- 9
Let the dip cool for 10 minutes before serving with garlic bread dippers, crostini, toasted baguette, or chips.
Notes
Prep and total time include the stated 15-minute cooling after roasting and 10-minute cooling before serving. The amount of parsley used for the topping is not specified separately.
