Ingredients

  • 3.5 cup Corn Chex cereal
  • 3.5 cup Rice Chex cereal
  • 1.5 cup Mini pretzels (Mini twists or pretzel sticks may be used.)
  • 1.5 cup Mini crackers (The author used mini saltines; plain mini toast or crackers may also be used.)
  • 1.5 cup Mixed roasted unsalted nuts (Use any mix of nuts; the author used 1/2 cup each roasted unsalted almonds, cashews, and peanuts. Make sure the nuts are unsalted.)
  • 1 stick Vegan butter (Equivalent to 1/2 cup.)
  • 0.667 cup Maple syrup
  • 0.333 cup White miso (Miso paste.)
  • 1 tbsp Soy sauce
  • 2 tsp Garlic powder
  • 1 tsp Chipotle powder (Or more to taste.)

Steps

  1. 1

In a large bowl, combine the Corn Chex cereal, Rice Chex cereal, mini pretzels, mini crackers, and mixed nuts.

  2. 2

Melt the vegan butter in a saucepan over medium-low heat.

  3. 3

Add the garlic powder and chipotle powder to the melted butter, stirring until well combined.

  4. 4

Add the white miso and whisk until the mixture is smooth.

  5. 5

Add the soy sauce and maple syrup, whisking until the glaze is thoroughly combined.

  6. 6

Pour about one third of the glaze over the cereal mixture. Gently fold with a silicone spoon to coat.

  7. 7

Repeat with the remaining glaze, adding it in thirds and folding after each addition until everything is evenly coated.

  8. 8

Divide the mixture between two lined baking sheets, spreading it into a single layer as much as possible.

  9. 9

Bake at 250°F (120°C) for 1 hour. Every 15–20 minutes, stir and redistribute the mixture to help it dry evenly. It is ready when it has dried out considerably and turned deep brown.

  10. 10

Let the party mix cool completely before serving.

  11. 11

Store in an airtight container for up to 7 days.

Notes

Makes 11–12 cups. The source gives the bake time and temperature but no preparation time; prep time is estimated. The author suggests the mix as a snack for watching a game, sharing, or holiday gifting.
