Ingredients

  • 250 g dry spaghetti
  • 2 tbsp butter
  • 12 garlic (minced)
  • 1 tbsp oyster sauce
  • 2 tsp soy sauce
  • 2 tsp fish sauce
  • 30 g Parmesan or Pecorino cheese (grated)
  • green onion (for serving; amount not specified)
  • water (for boiling the spaghetti and reserving pasta water; amount not specified)

Steps

  1. 1

Bring a pot of water to a boil. Cook the spaghetti until it is just shy of al dente. Before draining or transferring the pasta, reserve some of the pasta water and save the rest for adjusting the sauce.

  2. 2

Melt the butter in a pan over heat.

  3. 3

Add the minced garlic to the melted butter and sauté for a couple of minutes, until fragrant.

  4. 4

Remove the pan from the heat. Stir in the oyster sauce, soy sauce, and fish sauce.

  5. 5

Transfer the cooked spaghetti to the garlic sauce and add a bit of the reserved pasta water.

  6. 6

With the heat off, add the grated Parmesan or Pecorino cheese. Toss the pasta until the cheese and sauce become creamy and emulsified, adding more reserved pasta water as needed.

  7. 7

Finish with green onion and serve.
