Ingredients

  • 360 g ripe bananas (Mashed until smooth; use large bananas.)
  • 1.3333 cup all-purpose flour
  • 0.3333 cup cocoa powder
  • 8 tbsp salted butter (Melted.)
  • 1 large egg (At room temperature.)
  • 0.3333 cup sour cream or Greek yogurt (At room temperature; use either sour cream or Greek yogurt.)
  • 0.5 cup light brown sugar
  • 0.5 cup granulated sugar
  • 1 tbsp vanilla bean paste
  • 1 cup semi-sweet chocolate chunks (Reserve some larger chunks for topping; extra chocolate for topping is unquantified.)
  • 0.5 cup walnuts (Roughly chopped; reserve some for topping. Extra topping walnuts are unquantified.)
  • 1 tsp baking soda

Steps

  1. 1

Preheat the oven to 175°C / 350°F. Line a loaf pan.

  2. 2

Mash the bananas in a bowl until smooth.

  3. 3

Add the melted butter, light brown sugar, and granulated sugar to the mashed bananas. Mix well for 2 minutes.

  4. 4

Add the egg, room-temperature sour cream or Greek yogurt, and vanilla bean paste. Mix until combined.

  5. 5

In a separate bowl, whisk together the flour, cocoa powder, and baking soda.

  6. 6

Add the dry ingredients to the wet mixture and gently mix just until combined. Do not overmix.

  7. 7

Fold in the chocolate chunks and roughly chopped walnuts.

  8. 8

Pour the batter into the lined loaf pan.

  9. 9

Sprinkle extra chocolate chunks and walnuts over the top, using some larger chocolate pieces if desired.

  10. 10

Bake at 175°C / 350°F for 45–55 minutes, until a toothpick inserted into the loaf comes out with a few moist crumbs.

  11. 11

Let the loaf cool in the pan for 15–20 minutes before removing it from the pan.

Notes

The quantities for extra topping chocolate and walnuts are not specified. Keeping larger chocolate chunks on top creates melted chocolate pockets when the bread is sliced.
