- 2 onions
- 1 bell pepper
- 2 tbsp minced garlic (A couple tablespoons)
- 0.333 cup all-purpose flour
- 1 can Rotel diced tomatoes and green chilies (Undrained; can size not specified)
- 1 box seafood stock (32 oz (907 g) box)
- 28 oz crushed tomatoes (One can)
- water (A little, to rinse out the crushed-tomato can)
- 1 tbsp hot sauce (Video text specifies 1 tablespoon; adjust to taste)
- 1 tbsp Cajun garlic sauce (Cajun Power brand shown; amount from video text)
- 0.25 tsp cayenne pepper (Or until you're happy with the heat)
- 1 tbsp Cajun seasoning (Use your preferred brand; video text specifies 1 tablespoon)
- sugar (A little)
- 0.5 tsp salt
- 1 tbsp parsley flakes
- 1 bunch green onions
Steps
- 1
Melt the salted butter in a large pot over medium heat.
- 2
Add the onions and bell pepper. Sauté until translucent.
- 3
Add the minced garlic and cook until fragrant.
- 4
Continue cooking the vegetables down, about 15 minutes in total for this stage.
- 5
Add the flour and mix it into the vegetables.
- 6
Cook the flour and vegetable mixture for about 15 minutes.
- 7
Add the undrained can of Rotel and stir it into the mixture.
- 8
Cook for about 10 minutes, until the Rotel is well incorporated with the vegetables.
- 9
Pour in the seafood stock.
- 10
Add the crushed tomatoes.
- 11
Add a little water to rinse out the crushed-tomato can, then pour that water into the pot.
- 12
Add the hot sauce, Cajun garlic sauce, cayenne pepper, Cajun seasoning, and a little sugar. Stir to combine.
- 13
Bring the mixture to a simmer, cover the pot, and cook for about 30 minutes so the flavors can meld.
- 14
Taste and adjust the seasoning as needed, then add the salt and parsley flakes.
- 15
Add the green onions.
- 16
Season the shrimp separately before adding it to the sauce; the source does not specify the seasoning or amount used.
- 17
Add the seasoned shrimp to the pot and cook for 5–7 minutes.
- 18
Remove the pot from the heat.
