Ingredients

  • 450 g firm tofu (Remove as much moisture as possible.)
  • carrot (Use a small amount; thinly slice, then finely chop.)
  • 2 green onions (Finely chopped.)
  • 0.333 tsp salt
  • black pepper (A little, to taste.)
  • 1 tsp garlic (Minced.)
  • 1 tsp soy sauce (For the tofu filling.)
  • 1 tsp sesame oil (For the tofu filling.)
  • 0.5 tsp sugar (For the tofu filling.)
  • 1 tbsp potato starch (Helps the filling hold together.)
  • rice paper (Use enough sheets to make 5 rolls; briefly dip each sheet in cold water.)
  • oil (For lightly spraying or brushing the outside before air-frying.)
  • 1 tbsp soy sauce (For the dipping sauce.)
  • 1 tbsp water (For the dipping sauce.)
  • 0.5 tbsp vinegar (For the dipping sauce.)
  • 1 tsp sugar (For the dipping sauce.)

Steps

  1. 1

Remove as much moisture as possible from the tofu. This helps the rice paper become crispier.

  2. 2

Thinly slice a small amount of carrot, then finely chop it. Finely chop the green onions.

  3. 3

Add the carrot, green onions, and tofu to a bowl.

  4. 4

Add the salt, a little black pepper, minced garlic, 1 teaspoon soy sauce, sesame oil, sugar, and potato starch. Mix everything well so the filling holds together.

  5. 5

Briefly dip one rice-paper sheet in cold water. Do not soak it for too long; it will continue to soften as you work.

  6. 6

Place about 2 heaping tablespoons of tofu filling on the softened rice paper.

  7. 7

Gently roll the rice paper around the filling, pressing the ends together to help keep the filling from coming out. Repeat to make 5 rolls.

  8. 8

Cut the rolls into bite-sized pieces with a knife or kitchen scissors.

  9. 9

Arrange the pieces on the air-fryer tray, leaving a little space between each piece.

  10. 10

Lightly spray the outside with oil, or lightly brush them with oil if you do not have an oil spray.

  11. 11

Preheat the air fryer to 390°F (200°C). Air-fry the pieces for about 20 minutes, flipping them once halfway through.

  12. 12

Watch the bites during the last few minutes because air fryers vary. Continue cooking until they are golden and crispy.

  13. 13

While the bites cook, combine 1 tablespoon soy sauce, 1 tablespoon water, ½ tablespoon vinegar, and 1 teaspoon sugar. Mix well to make the dipping sauce.

  14. 14

After about 20 minutes, serve the golden, crispy tofu bites with the sweet-and-tangy soy dipping sauce.

Notes

The source does not specify the amount of carrot, the number or weight of rice-paper sheets, or the amount of oil used for spraying or brushing. Rice paper should not be soaked for too long because it softens while being handled.
