Weights are estimates. Together, the ingredients weigh about 885 g before cooking, which is about 80 g per serving.
Steps
Finely dice the tomatoes and set them aside.
Peel, crush, and finely dice the garlic. Peel and finely dice the onion.
Add the diced tomatoes, garlic, onion, dried chilli, brown sugar, apple cider vinegar, soy sauce, sea salt, and water to a medium pot.
Place the uncovered pot over low-medium heat and bring the mixture to a gentle simmer.
Simmer for 35–40 minutes, stirring every 5 minutes so the base does not catch. Cook until the relish has a consistency between a sauce and a jam.
Turn off the heat, taste the relish, and adjust with more salt if needed.
Carefully spoon the warm relish into a sterile jar with a sealable lid and seal the jar.
Transfer the sealed jar to the refrigerator. The relish is best enjoyed the following day, after the flavors have had time to mature.
Notes
The source lists a yield of 10–12 servings. Use ripe tomatoes for the fullest flavor; unripe tomatoes may produce a flat or bland relish. The finished flavor should be sharp, savory, umami-rich, and balanced rather than noticeably sweet. Refrigerate after jarring and allow the relish to mature overnight for the best flavor.
