Mango-Habanero Wing Sauce

Mango-Habanero Wing Sauce

Imported by Starr2 on SeeMeCook

A tropical, spicy-sweet wing sauce that balances habanero heat with mango, carrot, brown sugar, ketchup, miso, and garlic. Cider vinegar adds a bright, sharp finish, while blending creates a smooth, clingy sauce.

Ingredients

  • 2.5 oz frozen mango chunks (The cup measure is a heaping ½ cup.)
  • 1 carrot (Peeled and sliced thin.)
  • 0.5 cup cider vinegar
  • 0.25 cup water
  • 2 habanero chiles (Stemmed. Use 1 chile for a less spicy sauce.)
  • 1 tbsp packed brown sugar
  • 1 tbsp ketchup
  • 1 shallot (Sliced thin.)
  • 5 garlic cloves (Smashed and peeled.)
  • 2 tsp white miso
  • 5 fresh thyme sprigs
  • 1 tsp kosher salt
  • 0.5 tsp pepper

Steps

  1. 1

Combine the frozen mango, peeled and thinly sliced carrot, cider vinegar, water, stemmed habanero chiles, packed brown sugar, ketchup, thinly sliced shallot, smashed and peeled garlic, white miso, fresh thyme sprigs, kosher salt, and pepper in a small saucepan.

  2. 2

Bring the mixture to a boil over medium heat.

  3. 3

Reduce the heat to low, cover the saucepan, and simmer for 10 minutes.

  4. 4

Let the cooked mixture cool for 10 minutes.

  5. 5

Transfer the mixture to a blender and process until smooth, about 1 minute, scraping down the sides of the blender jar as needed.

  6. 6

Toss wings with the sauce in a large bowl.

  7. 7

Serve. The yield is enough sauce for about 3½ pounds of wings.

Notes

Makes 1⅓ cups of sauce, enough to sauce 3½ pounds of wings. For a less spicy sauce, use one habanero chile.
