Ingredients

  • 200 g Chorizo (Thinly sliced)
  • 1 kg Flour (Also set aside a little flour for dusting the rolls)
  • 60 cl Very cold water
  • 15 g Olive oil
  • 17 g Salt
  • 3.2 g Active dry yeast
  • Limiano cheese or Comté (Optional, in a small quantity for the filling)

Steps

  1. 1

Mix the very cold water, salt, yeast, olive oil, and flour until a large ball of dough forms.

  2. 2

Knead the dough by hand for approximately 5 to 6 minutes, until its texture changes and it becomes very soft.

  3. 3

Divide the dough into small portions and shape 8 balls.

  4. 4

Cut the chorizo into thin slices.

  5. 5

For each roll, arrange a first row of chorizo slices on the dough, then fold the dough over them.

  6. 6

Arrange a second row of chorizo and fold the dough over it in the same way to form the roll. For a version with cheese, add a little cheese with the chorizo and proceed in the same way.

  7. 7

Dust the rolls with a little flour to give them a rustic appearance, then make three small slashes in each one.

  8. 8

Bake in the oven at 200 °C for 15 minutes.

Notes

The transcript does not specify a possible rising time or the quantity of cheese. Cheese is an optional variation mentioned in the video; it is not included in the quantity list in the description.
