Ingredients
- 1 lb dry black-eyed peas
- 3 tbsp gumbo filé powder
- 2 bay leaves
- 1 small yellow onion (Peeled and cut in half)
- 1 tbsp freshly cracked black pepper
- water (Enough to cover the peas by 3 inches)
- 0.5 cup canola oil
- 0.25 cup Creole seasoning (Preferably Tony Cachere’s)
- 1 tbsp onion powder
- 3 tbsp paprika
- kosher salt (To taste; sometimes a pinch is needed)
Steps
- 1
Rinse the dry black-eyed peas in a colander. Pick through them and remove any broken beans or stones.
- 2
Place the peas in a large pot and add enough water to cover them by 3 inches.
- 3
Add the gumbo filé powder, bay leaves, and halved yellow onion to the pot.
- 4
Bring the pot to a boil, then reduce the heat to maintain a simmer. Cook for about 30 to 45 minutes, until the peas are completely tender but not falling apart.
- 5
When the peas are almost cooked, heat the oven to 400°F.
- 6
Drain the peas in a colander. Place them on a towel-lined baking sheet to cool and dry; do not rinse them. Move the peas around slightly to help them dry.
- 7
Transfer the peas to a large bowl. Add the canola oil, Creole seasoning, onion powder, paprika, and freshly cracked black pepper, then toss until the peas are evenly coated.
- 8
Taste the seasoned peas and adjust the seasoning to your liking. Add a pinch of kosher salt if needed.
- 9
Line two baking sheets with parchment paper. Spread the seasoned peas into an even layer across the baking sheets.
- 10
Bake the peas at 400°F for 10 minutes.
- 11
Reduce the oven temperature to 350°F and bake for another 40 minutes, or until the peas are crispy.
- 12
Cool the crispy black-eyed peas completely.
- 13
Store the cooled peas in an airtight container for up to 1 month.
Notes
The source does not specify the amount of water beyond covering the peas by 3 inches. Cool completely before storing in an airtight container. The peas can be added to salads or eaten as a snack.
