One-Pot Rice with Chorizo

One-Pot Rice with Chorizo

Recipe by Andy Cooks @andyhearnden · Instagram

Imported by Bryan Lagos on SeeMeCook

A comforting dish of Arborio rice cooked in a single pot with chorizo, vegetables, chicken stock, and baby spinach. The chorizo adds a smoky flavor, and its fat enriches the rice as it cooks.

Ingredients

  • 1 onion (Peeled and finely diced)
  • 1 carrot (Finely diced)
  • 1 tallo celery (Finely diced)
  • 2 dientes garlic (Crushed and roughly chopped)
  • 2 salchichas chorizo (Cut into 3–4 cm pieces; the weight is not specified in the source)
  • 2 tbsp olive oil
  • 0.5 tsp smoked paprika
  • 0.75 tsp salt (Divided: ½ tsp for the vegetables and ¼ tsp for the rice; adjust to taste at the end)
  • black pepper (To taste; the source specifies 12 turns of the pepper mill)
  • 120 g Arborio rice (No need to rinse)
  • 500 ml chicken stock
  • 60 g baby spinach

Steps

  1. 1

Peel the onion and carrot and finely dice them. Finely dice the celery as well, then set the vegetables aside.

  2. 2

Crush and roughly chop the garlic. Set it aside separately.

  3. 3

Cut the chorizo sausages into 3–4 cm pieces and set them aside.

  4. 4

Add the olive oil to a medium-sized saucier pan. Heat the pan over high heat for 30 seconds.

  5. 5

Add the onion, carrot, and celery along with ½ tsp of salt. Sauté the vegetables for 2–3 minutes, until the onion becomes translucent.

  6. 6

Add the garlic and stir to combine it with the vegetables.

  7. 7

Add the sliced chorizo and mix it with the vegetables. Cook for 2 minutes, or until the chorizo fat begins to render.

  8. 8

Add the smoked paprika, ¼ tsp of salt, 12 turns of black pepper, and the unrinsed Arborio rice. Keep the pan over the heat and lightly toast the rice for 1 minute.

  9. 9

Pour in the chicken stock and stir, scraping up any grains of rice stuck to the bottom. Bring the stock to a gentle simmer.

  10. 10

Reduce the heat to low, cover the pan, and cook for 15 minutes.

  11. 11

Remove the lid and check whether the rice is tender. If it is still firm, cover again and cook over low heat for 5 more minutes.

  12. 12

Remove the lid, increase the heat to high, and add the spinach.

  13. 13

Cover again and cook for 60 seconds.

  14. 14

Remove the lid, stir the rice, and cook for another 60 seconds.

  15. 15

Taste the rice and adjust the seasoning if necessary. Serve on plates and enjoy.

Notes

The weight of the two chorizo sausages is not specified in the source; it was estimated solely to calculate grams and nutrition. The source does not specify an exact temperature, only high and low heat levels.
