Ingredients

  • 60 Ritz crackers (From 2 sleeves; about 180 g)
  • 0.75 cup Peanut butter (No-stir, spreadable)
  • 1 lb Semi-sweet chocolate bars (Chopped, or use chocolate chips)
  • 2 tsp Coconut oil (Optional)
  • Sprinkles (Optional, for decorating)
  • Flaky sea salt (Optional, for decorating)
  • Chopped peanuts (Optional, for decorating)

Steps

  1. 1

Place the crackers round-side down on a cutting board. Spread about ½ teaspoon of peanut butter on the flat side of one cracker. Top with the flat side of another cracker and press gently until the peanut butter reaches the edges without squeezing out. Repeat to make 30 sandwiches, then place them on a small sheet tray and freeze for 15 minutes while preparing the chocolate.

  2. 2

Pour about 1 inch of water into the base of a double boiler or medium pot. Set it over medium-high heat and bring the water to a simmer. Reduce the heat to medium-low, then place a large heatproof bowl over the top, making sure the bowl’s bottom does not touch the water.

  3. 3

Add the chopped chocolate and, if using, the coconut oil to the bowl. Cook for 4–6 minutes, stirring occasionally, until the chocolate is fully melted and smooth. Remove the bowl from the heat.

  4. 4

Dip the cracker sandwiches into the melted chocolate one at a time, turning each to coat all sides. Lift each cookie out with a fork and let excess chocolate drip off. Arrange them on a parchment-lined sheet tray.

  5. 5

Let the chocolate set for about 15 minutes, until it is still glossy but has hardened slightly. Decorate with sprinkles, flaky sea salt, or chopped peanuts.

  6. 6

Let the chocolate harden completely. To firm the cookies more quickly, refrigerate them for 5–10 minutes.

Notes

The source lists sprinkles, flaky sea salt, and chopped peanuts as decorating options but gives no quantities. The listed prep and cook times do not include the freezing and chocolate-setting time.
