Ingredients

  • 200 g white chocolate (for the chocolate base)
  • 150 g strawberries (diced)
  • 50 g sugar (for the strawberry layer)
  • 1 tsp lemon juice (for the strawberry layer)
  • 2 g agar-agar (to thicken the strawberry sauce)
  • 10 g gelatin (add to the cream and leave for 20 minutes)
  • 130 ml 33% heavy cream (for the gelatin mixture)
  • 500 g farmer’s cheese or cream cheese (use one of the options)
  • 150 g powdered sugar (for the filling)
  • 50 g butter (softened)

Steps

  1. 1

Melt the white chocolate in the microwave or in a double boiler.

  2. 2

Pour the chocolate into a silicone mold 12 cm in diameter and 9 cm high, and spread it evenly over the inside of the mold; use a pastry brush if needed.

  3. 3

Place the mold in the refrigerator until the chocolate has fully set.

  4. 4

Dice the strawberries. Add the sugar, lemon juice, and agar-agar.

  5. 5

Bring the strawberry mixture to a boil, then cook for 2–3 minutes, until thickened.

  6. 6

Remove the strawberry sauce from the heat and let it cool.

  7. 7

Combine the gelatin with the cream and leave for 20 minutes.

  8. 8

After resting, melt the gelatin mixture in the microwave or on the stovetop.

  9. 9

Combine the cheese, powdered sugar, softened butter, and melted gelatin-and-cream mixture. Blend until smooth. If using a mixer, press the cheese through a sieve first.

  10. 10

Layer the cheese mixture and strawberry sauce in the set chocolate mold.

  11. 11

Refrigerate the paska for 3–4 hours, or preferably overnight, to allow it to set.

  12. 12

Turn out the chilled paska, carefully remove the silicone mold, and decorate as desired.

  13. 13

    Serve chilled.
