Ingredients
- 2 tbsp olive oil (Divided)
- 8 oz shiitake mushrooms (Thinly sliced)
- 2 tbsp fresh ginger (Grated or minced)
- 4 cloves garlic (Pressed or minced)
- 6 cups vegetable broth
- 2 tbsp soy sauce (Additional soy sauce may be added to taste)
- 16 oz frozen potstickers (Use 16 to 20 ounces; vegetarian or meat-filled dumplings may be used)
- 5 scallions (Thinly sliced and divided)
- 3 baby bok choy (Ends trimmed off and leaves separated)
- 2 tsp toasted sesame oil
- freshly-ground black pepper (A few twists, plus additional to taste if needed)
- chili crisp (Optional topping)
- toasted sesame seeds (Optional topping)
- furikake seasoning (Optional topping)
- fried garlic (Optional topping)
Steps
- 1
Heat 1 tablespoon of the olive oil in a large stockpot over medium-high heat.
- 2
Add the sliced shiitake mushrooms and sauté, stirring occasionally, until browned.
- 3
Add the remaining 1 tablespoon olive oil, the garlic, and the ginger. Sauté for 1–2 more minutes, stirring occasionally, until fragrant.
- 4
Add the vegetable broth and soy sauce, and stir to combine. Continue heating until the broth reaches a boil.
- 5
Add the frozen potstickers, half of the sliced scallions, and the bok choy. Stir to combine.
- 6
Cook for 3–4 minutes, or until the potstickers are cooked. Avoid overcooking, since the wrappers can soften and break down.
- 7
Stir in the toasted sesame oil and a few twists of freshly-ground black pepper. Taste and add more soy sauce or black pepper if needed.
- 8
Serve immediately, generously garnished with the remaining scallions and any optional toppings, such as chili crisp, toasted sesame seeds, furikake seasoning, or fried garlic.
Notes
The author notes that the soup is customizable with different dumplings, vegetables, and seasonings. Additional options mentioned include miso or curry paste, as well as bell peppers, broccoli, carrots, peas, or zucchini. If using vegetable dumplings, sautéed ground pork or chicken can be added for extra protein. Add the potstickers only a few minutes before serving to help keep their wrappers intact.
