Ingredients

  • 250 g penne pasta
  • 24 cloves fresh garlic (Thinly sliced)
  • 0.5 yellow onion (Finely chopped; source states 1/2 yellow onion)
  • 10 Campari tomatoes (Use 10–12 tomatoes)
  • 2 tbsp tomato paste
  • 2 tbsp garlic paste
  • 1 tbsp red chili flakes (Or more to taste)
  • salt (To taste; also used in the pasta cooking water)
  • 0.5 cup pasta water (Reserved from boiling the pasta)
  • 1 jalapeño (Deseeded and diced)
  • 0.5 cup freshly grated Parmesan cheese (For garnish)
  • 0.333 cup extra virgin olive oil (Source states 1/3 cup)
  • fresh basil (A handful, plus additional basil for garnish)

Steps

  1. 1

Boil the penne according to the package instructions in salted water.

  2. 2

When the pasta is boiled, reserve 1/2 cup of the pasta water. Drain the remaining water and set the pasta aside.

  3. 3

Heat the extra virgin olive oil in a skillet over medium-low heat.

  4. 4

Add the thinly sliced garlic and sauté for about 30 seconds, or until fragrant.

  5. 5

Add the finely chopped onion and mix well.

  6. 6

Add the diced jalapeño and red chili flakes, stirring them into the garlic and onion.

  7. 7

Add the Campari tomatoes and season with salt to taste.

  8. 8

Add the tomato paste and the reserved pasta water.

  9. 9

Cover the skillet and cook over medium-low heat until the tomatoes are tender.

  10. 10

Uncover the skillet and cook for about 5 minutes, mixing occasionally, until the sauce thickens.

  11. 11

Add the fresh basil. Taste the sauce and adjust the salt according to your preference.

  12. 12

Add the boiled penne to the skillet and mix it into the sauce.

  13. 13

Garnish with freshly grated Parmesan cheese and additional fresh basil. Serve warm.

Notes

The source does not specify the exact pasta boiling time or the cooking time required for the covered tomato mixture beyond cooking until tender. Chili flakes may be increased to taste.
