Ingredients

  • 3 tbsp TINE Meierismør (butter), for the batter (Melted; lactose-free butter may be used for a lactose-free version.)
  • 3 dl Wheat flour
  • 0.5 tsp Salt (Optional; may be omitted.)
  • 6 dl TINE Lettmelk 1.0% (low-fat milk) (Lactose-free low-fat milk may be used for a lactose-free version.)
  • 3 Eggs (Preferably at room temperature.)
  • 3 tbsp TINE Meierismør (butter), for frying (Lactose-free butter may be used for a lactose-free version; use a little at a time as needed for frying.)
  • 2 dl Blueberry jam (Suggested serving accompaniment.)

Steps

  1. 1

Melt the butter for the batter in a small saucepan, then let it cool slightly.

  2. 2

Combine the flour and salt in a bowl. Add about half of the milk and whisk until the batter is thick and smooth, with no lumps.

  3. 3

Add the melted butter to the batter and mix it in.

  4. 4

Gradually whisk in the remaining milk, a little at a time.

  5. 5

Stir in the eggs until the batter is thin and smooth.

  6. 6

Let the batter rest for at least 20 minutes before frying.

  7. 7

Heat a frying pan over medium-high heat and melt a little of the frying butter in it.

  8. 8

Use a ladle or jug to pour in enough batter to just cover the bottom of the pan. Tilt and rotate the pan to spread the batter evenly.

  9. 9

Cook the pancake for 1–2 minutes, or until the top has set. Turn it over and cook for about the same length of time on the other side.

  10. 10

Transfer the cooked pancakes to a plate and stack them to help keep them warm. Repeat with the remaining batter, adding a little more butter to the pan as needed.

  11. 11

Serve warm with blueberry jam, for example.

Notes

The recipe makes about 12 pancakes. For a coarser version, replace some of the wheat flour with the same amount of coarse whole-wheat flour. The batter keeps in the refrigerator for at least 2–3 days and can be frozen; it may be thawed in a microwave. The author suggests jam, sugar, bacon, or brown cheese as topping options.
