Ingredients

  • 1 lb ground beef
  • cowboy butter seasoning (Use to season the beef and again after adding broth; amount to taste.)
  • black pepper (Use to season the beef and again after adding broth; amount to taste.)
  • Easy Onion chopped onion (Optional; use as desired. The creator says diced onion can be added at the beginning instead.)
  • 1 lb ditalini pasta
  • 4 cup low-sodium beef broth
  • 1 cup broccoli (Fresh; chopped very small.)
  • 0.875 cup heavy cream (About ¾ to 1 cup; add another splash if the pasta seems dry.)
  • 0.5 lb sharp cheddar cheese (Shred a 1 lb block; use about half. Cheese may be switched for another kind.)

Steps

  1. 1

Heat a large pan over medium heat and cook 1 lb ground beef, breaking it up as it cooks.

  2. 2

Season the beef well with cowboy butter seasoning and black pepper, to taste.

  3. 3

While the beef cooks, shred the cheddar. The creator shreds a 1 lb block and uses about half; reserve the rest.

  4. 4

Add Easy Onion chopped onion to the beef if using. Alternatively, add diced onion at the beginning of cooking, or omit the onion.

  5. 5

Drain off some of the grease, leaving a little in the pan.

  6. 6

Add the ditalini pasta and toss it with the beef to toast it briefly in the pan.

  7. 7

Pour in the low-sodium beef broth, then season again with the same cowboy butter seasoning and black pepper.

  8. 8

Bring the broth to a boil. Once boiling, add the finely chopped broccoli.

  9. 9

Cover the pan and let the broccoli steam for a few minutes.

  10. 10

Uncover and toss everything well. Continue cooking for about 5 minutes, until the pasta is nearly cooked.

  11. 11

Add about ¾ to 1 cup heavy cream and stir well. If the pasta seems dry, add another splash of cream.

  12. 12

Add the shredded cheddar and stir until melted, which should take a few minutes. Serve; the creator serves it with butter bread.

Notes

The transcript says the dinner takes about 15 minutes, but does not specify exact heat settings or the duration of the initial beef cooking and broccoli steaming. Serve with butter bread if desired; butter bread is suggested as an accompaniment, not part of the dish ingredient list.
