Ingredients
- 0.5 cup High-protein Greek yogurt (unsweetened)
- 1 tbsp Mayonnaise (low-fat optional)
- 1 tsp Mustard (Dijon or yellow type)
- 1 Garlic (small clove, finely minced or powder)
- 0.5 Lemon juice (the juice of half a lemon)
- 0.5 tsp Honey (to balance the acidity)
- Salt and pepper (to taste)
- 1 Cucumber (grated)
- 0.25 cup Red onion (finely chopped)
- 0.5 cup Sweet corn (canned or cooked)
- 2 can Tuna in water (drained)
- 1 tbsp Fresh dill (chopped)
Steps
- 1
In a small bowl, prepare the dressing by mixing the Greek yogurt, mayonnaise, mustard, minced garlic, lemon juice, and honey.
- 2
Season the dressing with salt and pepper to taste, mix well, and set aside.
- 3
Grate the cucumber and place it in a large salad bowl.
- 4
Add the chopped onion, sweet corn, and the two cans of previously drained tuna to the bowl with the cucumber.
- 5
Incorporate the fresh chopped dill and an additional pinch of salt if necessary.
- 6
Pour the prepared dressing over the salad ingredients and toss gently until everything is well combined.
- 7
Serve immediately or refrigerate for 15 minutes to allow the flavors to meld.
Notes
If the cucumber releases a lot of water when grated, you can squeeze it slightly before mixing so the salad doesn't become too watery. This recipe is excellent for meal prep as it keeps well in the refrigerator.
