Ingredients
- 1 cup butter (softened; for the cookies)
- 1 cup granulated sugar (for the cookies)
- 0.5 cup brown sugar (for the cookies)
- 2 eggs (for the cookies)
- 2 tsp vanilla (for the cookies)
- 3 cup flour (for the cookies)
- 1 tsp baking soda (for the cookies)
- 0.5 tsp salt (for the cookies)
- 0.25 cup granulated sugar (for the cinnamon sugar coating)
- 1 tbsp cinnamon (for the cinnamon sugar coating)
- 8 oz cream cheese (softened; for the cheesecake filling)
- 0.25 cup butter (softened; for the cheesecake filling)
- 2 cup powdered sugar (sifted; for the cheesecake filling)
- 1 tsp vanilla (for the cheesecake filling)
Steps
- 1
Preheat the oven to 350°F. Line baking sheets with parchment or other lining as directed by the source.
- 2
In a small bowl, mix the ¼ cup granulated sugar with the cinnamon for the coating. Set the cinnamon sugar aside.
- 3
Cream the softened cookie butter with the granulated sugar and brown sugar until combined and creamy.
- 4
Beat the eggs and the cookie vanilla into the creamed butter-and-sugar mixture.
- 5
Add the flour, baking soda, and salt. Mix until a soft dough forms.
- 6
Roll the dough into balls using about 1½ tablespoons of dough for each ball.
- 7
Coat each dough ball generously in the prepared cinnamon sugar.
- 8
Place the coated dough balls on the lined baking sheets, leaving 2 inches between them.
- 9
Bake at 350°F for 10–12 minutes, or until the edges are set.
- 10
Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a rack to cool completely.
- 11
For the filling, beat the softened cream cheese and softened filling butter until smooth.
- 12
Add the sifted powdered sugar and filling vanilla. Beat until the mixture is creamy.
- 13
Chill the filling for 20–30 minutes so it is firm enough to assemble without squishing out.
- 14
When the cookies are completely cool, sandwich them with the chilled cheesecake filling.
Notes
Makes about 15 sandwich cookies. The source lists a 12-minute bake time but gives a range of 10–12 minutes in the instructions; use the edges being set as the doneness cue. Chill the filling before assembling, and make sure the cookies are completely cool before filling.
