Steps
- 1
Oil the sirloin steak and season generously with salt and pepper.
- 2
Heat an oiled pan and sear the steak for 2 minutes on each side, until golden.
- 3
Turn the heat down and cook the steak for a further 2 minutes on each side.
- 4
Add two whole garlic cloves and the butter to the pan. Baste the steak with the garlic butter.
- 5
Remove the steak from the heat and leave it to rest, then slice it thinly.
- 6
In the same pan, add the two grated garlic cloves, Italian seasoning and all-purpose seasoning.
- 7
Turn the heat down, add the light double cream and stir until combined. Cook for a couple of minutes.
- 8
Add the Parmesan and Stilton. Stir until the cheeses melt, then leave the sauce at a gentle simmer for 10 minutes.

Add oil to a pan for the onion. Add the onion and sprinkle over the sugar; stir and cook for 15 minutes to caramelize.
- 10
Cut open the ciabatta rolls and top them with sliced mozzarella. Air-fry at 190°C for 8 minutes, until the mozzarella is melted.
- 11
Spread garlic mayonnaise over the ciabatta, then layer on the rocket, sliced steak and caramelized onions. Put on the tops and cut each sandwich down the middle.
- 12
Serve the garlic Parmesan sauce and place the sandwiches face down into it. Serve with skin-on fries, fresh parsley and extra grated Parmesan.
