Ingredients

  • 220 g Wheat flour
  • 180 g Powdered sugar for the dough
  • 10 g Baking powder
  • Salt (A pinch)
  • 1 Small egg
  • 2 Tangerine zest (Zest of 2 tangerines)
  • 40 ml Tangerine juice for the dough
  • Orange food coloring (Optional)
  • 60 g Butter (Softened)
  • Sugar for coating (Quantity not specified)
  • Powdered sugar for coating (Quantity not specified)
  • 150 g Cream cheese (For the optional filling)
  • 15 g Powdered sugar for the filling (For the optional filling)
  • 15 ml Cream (For the optional filling)
  • 15 ml Tangerine juice for the filling (For the optional filling)
  • 1 tsp Vanilla extract (For the optional filling)
  • 100 g Sea buckthorn (Fresh or thawed)
  • 1 Orange
  • 2 Cinnamon sticks
  • 10 g Ginger
  • 500 ml Boiling water

Steps

  1. 1

For the dough, sift the flour. Add the powdered sugar, baking powder, and a pinch of salt, and mix.

  2. 2

In a separate bowl, combine the egg, zest, and tangerine juice. Add the orange food coloring, if desired, and mix.

  3. 3

Add the liquid mixture and softened butter to the dry ingredients. Knead the dough with a spatula. It will be sticky.

  4. 4

Cover the dough with plastic wrap and refrigerate for 2 hours or overnight.

  5. 5

For the cheesecake filling, combine the cream cheese, powdered sugar, cream, tangerine juice, and vanilla extract.

  6. 6

On a flat surface covered with plastic wrap, shape the filling into 18 small balls. Place them in the freezer until completely firm.

  7. 7

Measure out approximately 30 g of chilled dough per cookie. Place a frozen ball of filling in the center of each portion, if making filled cookies, and shape into a ball. The cookies can also be made without filling.

  8. 8

First roll each ball in sugar, then in powdered sugar, to create a distinct crackled pattern.

  9. 9

Arrange the balls on a baking sheet lined with parchment paper, leaving space between them.

  10. 10

Bake in an oven preheated to 180 °C for 12–15 minutes.

  11. 11

For the tea, place the sea buckthorn, orange, cinnamon sticks, and ginger in a vessel.

  12. 12

Pour 500 ml of boiling water over the ingredients and prepare the vitamin tea.

Notes

The author does not specify the amount of sugar and powdered sugar for coating. The filling should be shaped into 18 balls, but the cookies can also be made without it. The transcription does not detail the steeping method for the tea, so only the mechanically necessary step of pouring over boiling water has been added.
