Ingredients
- 1.5 cup cooked rice (Warm)
- 0.5 block Spam (Diced small)
- 2 tsp mirin
- 1 tsp soy sauce (For glazing the Spam)
- 1 tsp sugar (For glazing the Spam)
- 0.75 cup kimchi (Chopped)
- neutral oil (For sautéing)
- 1 tsp soy sauce (For sautéing the kimchi)
- 1 tsp sugar (For sautéing the kimchi)
- 0.25 cup Korean chives (Chopped; regular chives or green onion may be used instead)
- 1.5 tbsp sesame oil
- 1 tbsp sesame seeds
- 2 sheet gim (nori) (Cut diagonally)
- 4 fried eggs (Prepare before assembly)
- 2 slice cheddar or American cheese (Cut diagonally)
Steps
- 1
Pan-fry the diced Spam until lightly browned.
- 2
Add the mirin, 1 teaspoon soy sauce, and 1 teaspoon sugar to the Spam. Cook until the Spam is lightly glazed.
- 3
Heat a little neutral oil in the same pan.
- 4
Add the chopped kimchi, remaining 1 teaspoon soy sauce, and remaining 1 teaspoon sugar. Sauté until the kimchi is softened.
- 5
Combine the warm cooked rice, glazed Spam, sautéed kimchi, chopped Korean chives, sesame oil, and sesame seeds. Mix well.
- 6
Place one triangle of gim on the work surface with the shiny side facing down.
- 7
Shape the Spam-kimchi rice into a ball with your hands. Place it over a fried egg, then shape the rice and egg into a triangle.
- 8
Place a triangle of cheese on each side corner of the gim.
- 9
Fold the bottom corner of the gim up over the rice.
- 10
Fold both side corners inward so the cheese helps seal everything into a triangular pocket.
Notes
The recipe says it makes about 4 pockets. If cheese is omitted, use a little rice along the gim edges to help seal the pockets instead. The source does not specify exact frying temperatures or cooking times.
