Ingredients
- 1 whole chicken
- 1 cup blended pineapple
- 1 cup chicken stock
- 0.5 cup shoyu
- 0.5 cup brown sugar
- 1 tbsp ginger powder
- 1 tbsp minced garlic
- 1 tbsp smoked paprika
- 0.25 cup ketchup
- 1 tbsp cornstarch (For the slurry; use only as much as needed to avoid over-thickening.)
- 1 tbsp cold water (For the slurry.)
- green onions (Sliced, for garnish.)
- sesame seeds (For garnish.)
Steps
- 1
Mix the blended pineapple, chicken stock, shoyu, brown sugar, ginger powder, minced garlic, smoked paprika, and ketchup until combined.
- 2
Before the mixture touches the raw chicken, reserve about 1 cup of it in a separate container for the finishing sauce. Set the remaining mixture aside for basting.
- 3
Preheat the Denali 605 Pro grill to 350°F (175°C), using only the four outside burners and leaving the two middle burners off for indirect heat.
- 4
Truss the chicken. Secure it to the rotisserie attachment, centering and balancing it.
- 5
Close the grill and let the chicken rotate for the first hour.
- 6
After the first hour, brush the rotating chicken with the basting mixture every 20 minutes.
- 7
Keep the grill near 350°F (175°C), watching closely for flare-ups as the glaze caramelizes.
- 8
Continue cooking until the thickest parts of both the breast and thighs reach 165°F (74°C).
- 9
Bring the reserved sauce to a boil in a saucepan.
- 10
Mix the cornstarch and cold water to make a slurry. Add it gradually to the boiling sauce, using only as much as needed to avoid over-thickening.
- 11
Simmer the sauce until slightly thickened.
- 12
Rest the chicken for 10–15 minutes.
- 13
Brush the chicken with the finished sauce and garnish with sliced green onions and sesame seeds.
- 14
Slice, serve, and enjoy.
Notes
The recipe does not specify the chicken's weight or the amounts of green onions and sesame seeds. The sauce-reserving instruction gives an approximate 1-cup amount. Total time is estimated; actual rotisserie time depends on chicken size and reaching the stated internal temperature.
