  • red onion (A little, finely chopped, for finishing)
  • cilantro (A little, for finishing)

Steps

  1. 1

Place the bone-in beef in a bowl and season it with garlic powder, complete adobo seasoning, black pepper, salt, sweet paprika, and fajita seasoning. Mix very well to coat all the meat.

  2. 2

Let the seasoned meat rest for about 20 minutes.

  3. 3

While the meat rests, cut the tomatoes, half the onion, and half the red bell pepper into medium pieces.

  4. 4

Heat a drizzle of oil in a pot and add the tomatoes, onion, and red bell pepper to sauté them.

  5. 5

Add the garlic cloves, dried pasilla chile, guaje chiles, oregano, a pinch of cumin, and white vinegar. Mix very well.

  6. 6

Cook the vegetables until the tomatoes are cooked through.

  7. 7

Remove the cooked tomatoes and vegetables from the pot. In the same pot, sauté the meat with the bay leaves and a few leaves of dried thyme.

  8. 8

Place the sautéed tomatoes and vegetables in a blender. Add a little water and a pinch of salt, then blend until smooth.

  9. 9

Pour the blended sauce into the pot over the meat.

  10. 10

Let the meat simmer in the sauce for about 40 minutes.

  11. 11

Add the potato and carrot. Continue cooking until the vegetables are tender.

  12. 12

Add a little finely chopped red onion and cilantro. Mix very well before serving.

  13. 13

Serve the beef stew with rice and a little Pollo Campero-style salad.
