Ingredients
- 1 lb smoked sausage (Such as andouille or kielbasa; sliced into 1-inch pieces)
- 1.5 lb boneless, skinless chicken thighs (Large diced)
- 1 tbsp vegetable oil
- Cajun seasoning (To taste; recipe follows)
- 1 green bell pepper (Diced)
- 2 yellow onions (Diced)
- 2 celery ribs (Diced)
- 1 tbsp tomato paste
- 1.5 cup extra-long grain white rice
- 3 cup unsalted chicken stock
- 1 bunch scallion (Thinly sliced, for garnish)
- 2 tbsp kosher salt (For Cajun seasoning)
- 2 tbsp sweet paprika (For Cajun seasoning)
- 1 tbsp freshly ground black pepper (For Cajun seasoning)
- 1 tbsp garlic powder (For Cajun seasoning; source writes “1 tablespoons”)
- 1 tbsp onion powder (For Cajun seasoning)
- 1 tbsp cayenne pepper (For Cajun seasoning)
- 1 tbsp dried oregano (For Cajun seasoning)
- 1 tbsp dried thyme (For Cajun seasoning)
Steps
- 1
Heat a large Dutch oven over medium-high heat.
- 2
Add the vegetable oil and sliced sausage to the hot pan. Cook, stirring occasionally, until the sausage is lightly browned, about 2 minutes.
- 3
Add the diced chicken and as much Cajun seasoning as desired. Cook, stirring occasionally, until the chicken is browned on all sides, 3–5 minutes.
- 4
Add the diced bell pepper, onions, and celery. Cook, stirring often, until the vegetables begin to sweat and the onions are slightly translucent, about 2 minutes.
- 5
Stir in the tomato paste.
- 6
Add the rice and chicken stock, then stir to combine.
- 7
Bring the mixture to a boil and taste it. Adjust the seasoning as needed.
- 8
Cover the Dutch oven and reduce the heat to maintain a simmer. Cook until the rice is tender and cooked through, about 15 minutes.
- 9
Remove the pot from the heat and let it rest, covered, until all the liquid is absorbed and the rice has steamed, about 5 minutes.
- 10
Fluff the jambalaya with a fork. Add more Cajun seasoning if desired.
- 11
Spoon into bowls and garnish with the thinly sliced scallions before serving.
