Ingredients

  • 5 large egg yolks
  • 2.25 cup mascarpone cheese
  • salt (Pinch)
  • 1.5 cup heavy cream
  • 1 tbsp vanilla bean paste
  • 0.333 cup granulated sugar (Used with the egg yolks)
  • 2 tbsp granulated sugar (Used to whip the heavy cream)
  • 32 ladyfingers (Source specifies 30–34 ladyfingers; use high-quality ladyfingers)
  • 2 cup strong brewed coffee or espresso (The instructions specifically say to brew 1 cup and cool it; the ingredient list says 2 cups)
  • 2 tbsp granulated sugar (Added to the coffee or espresso)
  • cocoa powder (For dusting)

Steps

  1. 1

Brew the strong coffee or espresso and let it cool completely. The written instructions specify brewing 1 cup, although the ingredient list calls for 2 cups.

  2. 2

In a heatproof bowl, whisk together the egg yolks, vanilla bean paste, 1/3 cup of the granulated sugar, and the pinch of salt.

  3. 3

Set the bowl over a saucepan of boiling water, making sure the bottom of the bowl does not touch the water. Whisk constantly for 10–12 minutes, until the mixture is pale and thick.

  4. 4

Remove the egg yolk mixture from the heat and let it cool to room temperature.

  5. 5

Once the yolk mixture has cooled, add the mascarpone cheese. Whisk with an electric blender for 2 minutes, until well combined.

  6. 6

In a separate bowl, whip the heavy cream with the remaining 2 tablespoons of granulated sugar until stiff peaks form.

  7. 7

Fold the whipped cream into the mascarpone-and-egg mixture with a spatula until just combined.

  8. 8

Add the 2 tablespoons of sugar to the cooled coffee mixture.

  9. 9

Dip each ladyfinger into the coffee mixture for 3–5 seconds on each side. Keep them soft and pliable but do not oversoak them.

  10. 10

Arrange a layer of ladyfingers in a large serving dish, trimming them as necessary to fit.

  11. 11

Spread half of the mascarpone mixture evenly over the ladyfingers.

  12. 12

Repeat the layers, beginning with the remaining ladyfingers and finishing with the remaining mascarpone mixture.

  13. 13

Dust the top of the tiramisu with cocoa powder.

  14. 14

Cover and refrigerate for at least 3–4 hours or overnight.

  15. 15

    Slice and serve chilled.

Notes

The ingredient list specifies 2 cups of coffee or espresso, while step 1 specifies brewing 1 cup. Follow the source's stated amount according to the size of the serving dish, but ensure there is enough cooled coffee to dip all the ladyfingers. Do not oversoak the ladyfingers, as they may become too wet and fall apart. Use high-quality ladyfingers and mascarpone for the best flavor and texture.
