Ingredients

  • 125 g Raspberries (fresh)
  • 30 g Pistachios (unsalted)
  • 225 g Greek Yogurt
  • 25 g White Chocolate (broken into pieces)
  • 25 g Milk Chocolate (broken into pieces)
  • 0.25 tsp Vanilla Extract (to taste)
  • 2 tsp Honey (for sweetness)
  • 0.5 tbsp Coconut Oil (for the chocolate)

Steps

    Prepare all ingredients. Carefully wash the raspberries and roughly chop the pistachios.

    In a bowl, mix the Greek yogurt with the vanilla extract and honey until smooth.

    Gently fold the raspberries into the yogurt, or place small mounds of yogurt onto a tray lined with parchment paper and press a raspberry into each one.

    Break the milk chocolate into pieces and melt it with part of the coconut oil over a double boiler, then set aside briefly to cool.

    Also break the white chocolate into pieces and melt it with the remaining coconut oil over a double boiler, then set aside briefly to cool.

    Drizzle the yogurt-raspberry mounds with the melted chocolate and sprinkle with the chopped pistachios.

    Let the bites firm up in the freezer for at least 2 hours until they are completely frozen.

Notes

The bites taste best straight from the freezer. You can store them in an airtight container in the freezer.
