Weights are estimates. Together, the ingredients weigh about 1.44 kg before cooking, which is about 360 g per serving.
Steps
Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for 4–5 minutes.
Add the minced garlic and sliced mushrooms. Cook for 8–10 minutes, allowing the mushrooms to release their liquid and for the water to cook off.
Mix in the smoked paprika and picked thyme leaves.
Add the drained, rinsed cannellini beans and the vegetable stock intended for the beans. Cover the pot and simmer for 4–5 minutes.
Add the silken tofu, nutritional yeast, miso, soy sauce, vegetable stock intended for the cream, and Dijon mustard to a small blender. Blend until smooth.
Pour the blended cream into the pot with the beans and heat through for 7–8 minutes, until it has thickened slightly.
Turn off the heat. Stir through the chopped parsley and lemon juice, then season with salt and pepper to taste.
Serve the creamy beans over buttered wholemeal sourdough toast, topped with rocket, additional parsley, chilli flakes, and black pepper.
Notes
For meal prep, reheat with a splash of water. Store in the refrigerator for 3–4 days or freeze. The source does not specify a freezer storage duration. The beans can also be served with gnocchi, pasta, or crusty bread.
