Ingredients

  • 2 lb carrots (Diagonally cut into about 2- to 3-inch pieces)
  • 5 tbsp butter
  • 4 cloves garlic (Minced)
  • 0.25 tsp salt (Or to taste; additional seasoning may be added before serving)
  • 0.25 tsp freshly ground black pepper (Or to taste; additional seasoning may be added before serving)
  • cooking spray (For greasing the baking sheet)
  • fresh parsley (Chopped, for garnish)

Steps

  1. 1

Preheat the oven to 425°F (220°C). Grease a baking sheet with cooking spray and set it aside. Cut the carrots diagonally into pieces about 2 to 3 inches long, then set them aside.

  2. 2

Melt the butter over medium heat in a large nonstick skillet or pan.

  3. 3

Add the minced garlic to the melted butter and cook for 3 minutes, stirring very frequently, until the garlic is lightly browned. Watch it closely and do not let it burn.

  4. 4

Toss the carrots with the garlic butter, either directly in the skillet or by pouring the butter over the carrots in a mixing bowl. Continue tossing until the carrots are evenly coated.

  5. 5

Transfer the coated carrots to the prepared baking sheet and arrange them in a single layer.

  6. 6

Bake for 22 to 30 minutes, or until the carrots are tender.

  7. 7

Remove the carrots from the oven and transfer them to a serving plate.

  8. 8

Taste the carrots and adjust the seasoning with additional salt or pepper if needed.

  9. 9

Garnish with chopped fresh parsley and serve.

Notes

Keep a close eye on the garlic butter because the garlic can go from golden to burnt quickly. The author mentions that rosemary or thyme may be added for extra flavor and suggests serving the carrots alongside roast chicken, turkey, steak, or seafood.
