Ingredients
- 8 oz cottage cheese (Half of a 16-oz tub)
- 2 eggs
- 4 tbsp powdered monkfruit sweetener (Use 3 to 4 tbsp; substitute another sweetener if desired. It must be powdered.)
- 3 tbsp cacao powder (Use 2.5 tbsp for a less rich cake; the author sometimes uses more.)
- vanilla extract (A small splash)
- sugar-free or regular chocolate chips (Optional but highly recommended; use a sprinkle or as many as desired)
Steps
- 1
Preheat the oven to 350°F (175°C).
- 2
Process the cottage cheese in a small food processor until smooth and the curds are gone.
- 3
Transfer the processed cottage cheese to a small oven-safe bowl.
- 4
Crack the two eggs into the processed cottage cheese.
- 5
Add the cacao powder and stir it into the cottage cheese and eggs.
- 6
Stir in 3 to 4 tablespoons of powdered monkfruit sweetener, making sure the sweetener is powdered.
- 7
Add a small splash of vanilla extract and mix thoroughly until the batter is smooth.
- 8
If using chocolate chips, sprinkle them over the batter. Shake the bowl gently so some of the chips become partially submerged, creating the lava-cake effect.
- 9
Bake at 350°F (175°C) for 33 to 35 minutes.
- 10
Remove the cake from the oven and let it cool for 2 to 3 minutes before serving.
