Ingredients
- 150 g Cookies (For the base; crush into crumbs)
- 1 Ripe banana (For the base; mash into a purée)
- 30 g Cocoa powder (Unsweetened)
- 450 g Tvorog (Preferably smooth; if lumpy, press through a sieve or blend)
- 300 ml Ryazhenka 4% (For the white layer)
- 120 g Sugar (For the white layer)
- 20 g Gelatin (Pour in 50 ml cold water and leave to bloom for 5–10 minutes)
- 50 ml Cold water (For blooming the gelatin)
- 2 Bananas (For the white layer; may be replaced with another fruit. Slice. The quantity in grams was not specified by the author)
- Lemon juice (A little, to prevent the sliced bananas from browning)
Steps
- 1
Crush the cookies into crumbs using a blender, rolling pin, or another convenient method.
- 2
Mash the ripe banana for the base with a fork or blend it into a purée.
- 3
Add the banana purée and cocoa powder to the cookie crumbs. Mix until smooth.
- 4
Line a 17 cm-diameter pan with parchment paper. Transfer the base mixture to the pan and press it into an even layer. Set the pan aside.
- 5
Pour 50 ml cold water over the gelatin and leave it to bloom for 5–10 minutes.
- 6
If the tvorog is lumpy, press it through a sieve or blend it.
- 7
Add the ryazhenka and sugar to the tvorog. Mix with a blender or spatula until smooth.
- 8
Melt the bloomed gelatin in a bain-marie or microwave.
- 9
Pour the melted gelatin into the tvorog mixture and mix vigorously with a mixer or whisk.
- 10
Slice the two bananas and drizzle them with a little lemon juice to prevent them from browning.
- 11
Add the sliced bananas to the tvorog mixture and stir.
- 12
Pour the tvorog mixture over the cookie base and smooth the surface.
- 13
Place the cheesecake in the refrigerator or on a balcony for approximately 1–2 hours, until the mixture sets.
Notes
The author notes that the bananas may be replaced with peach, nectarine, raspberries, mandarin, blueberries, or another fruit, but the cheesecake tastes best with bananas. The melting temperature for the gelatin and storage conditions were not specified.
