Ingredients

  • 1 lb lean ground beef (93/7 recommended)
  • 2 tbsp dried minced onion
  • 1 tsp kosher salt (divided)
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 0.5 cup beef broth (Water and Better than Bouillon may be used instead)
  • 2 Russet potatoes (medium, peeled and cut into 1/2-inch cubes)
  • 8 oz tomato sauce (1 can)
  • 1 tbsp yellow mustard
  • 2 tbsp mayonnaise (For the special sauce)
  • 2 tbsp ketchup (For the special sauce)
  • 2 tbsp dill pickles (diced; for the special sauce)
  • 1 tsp pickle juice (For the special sauce)
  • 0.5 tsp dried minced onion (For the special sauce)
  • optional toppings (Shredded cheddar, diced tomatoes, and diced pickles)

Steps

  1. 1

Turn the Instant Pot to the sauté setting. When the display reads HOT, add the ground beef and break it up.

  2. 2

Add the dried minced onion and brown the beef mixture for about 5 minutes. Drain off the excess grease.

  3. 3

Stir in 1/2 teaspoon of the kosher salt, the black pepper, and the garlic powder.

  4. 4

Pour in the beef broth and scrape the bottom of the pot so that nothing is sticking. Turn off the Instant Pot.

  5. 5

Add the cubed potatoes. Sprinkle them with the remaining 1/2 teaspoon of kosher salt.

  6. 6

Add the tomato sauce and yellow mustard. Do not stir.

  7. 7

Cover the Instant Pot and secure the lid. Set the valve to sealing. Select Manual/Pressure Cook and set it for 4 minutes.

  8. 8

When the cooking time ends, let the pot sit for 5–10 minutes. Move the valve to venting, remove the lid, and gently stir the casserole.

  9. 9

Combine the mayonnaise, ketchup, diced dill pickles, pickle juice, and dry minced onion in a small bowl. Stir to make the special sauce.

  10. 10

Scoop a serving of the beef and potatoes onto a plate and drizzle with some of the special sauce.

  11. 11

Top with shredded cheddar, diced tomatoes, and diced pickles, if using. Serve and enjoy.
