Ingredients
- 6 cup hulled strawberries (Use fresh, ripe strawberries; purée in batches.)
- 4 cup bottled lemon juice
- 6 cup granulated sugar
Steps
- 1
Prepare a boiling-water canner. Heat the jars in simmering water until they are ready for use; do not boil the jars.
- 2
Wash the canning lids in warm, soapy water and set the bands aside.
- 3
Working in batches, purée the hulled strawberries in a blender or food processor fitted with a metal blade until smooth. Transfer each completed batch to a large stainless-steel saucepan.
- 4
Add the bottled lemon juice and granulated sugar to the strawberry purée. Stir to combine.
- 5
Heat the mixture over medium-high heat, stirring occasionally, until it reaches 190°F. Do not let it boil.
- 6
Remove the saucepan from the heat and skim off any foam from the surface.
- 7
Ladle the hot concentrate into a hot pint jar, leaving 1/4 inch of headspace.
- 8
Remove air bubbles from the filled jar, then wipe the jar rim clean.
- 9
Center a lid on the jar and apply the band, adjusting it to fingertip tightness.
- 10
Place the filled jar in the boiling-water canner. Repeat the filling and sealing process until all jars are filled.
- 11
Ensure that the water covers the jars by 1 inch. Adjust the heat to medium-high, cover the canner, and bring the water to a rolling boil.
- 12
Process the pint jars for 15 minutes, adjusting the processing time for altitude as needed.
- 13
Turn off the heat and remove the canner cover. Let the jars cool in the canner for 5 minutes.
- 14
Remove the jars from the canner. If any bands are loose, do not retighten them.
- 15
Cool the jars for 12 to 24 hours. Check the seals; the lids should not flex when the center is pressed.
Notes
Yield: 7 pint jars (16 oz each). The source states to adjust processing time for altitude. The concentrate is preserved for serving throughout the year, but the source does not specify dilution instructions or post-opening storage.
