Ingredients
- 8 oz salmon fillet
- 0.25 tsp salt
- 0.25 tsp black pepper
- 2 tbsp olive oil
- 0.333 cup white onion (Diced)
- 0.333 cup green onions (Sliced)
- 1 tbsp garlic (Minced)
- 2 eggs
- 3 cups day-old rice
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp sugar
Steps
- 1
Season the salmon fillet on both sides with the salt and black pepper.
- 2
Heat the olive oil in a skillet over medium-high heat. Place the salmon skin side down and sear for 2 minutes.
- 3
Flip the salmon and cook for another 2 minutes.
- 4
Reduce the heat to low. Peel off the crispy salmon skin and break the salmon into pieces in the skillet.
- 5
Add the diced white onion, sliced green onions, and minced garlic to the skillet with the salmon. Cook for about 1 minute.
- 6
Add the two eggs and scramble them with the salmon and aromatics until the eggs are scrambled.
- 7
Add the day-old rice, soy sauce, oyster sauce, and sugar. Toss everything together so the rice, salmon, eggs, and sauce are evenly combined.
- 8
Increase the heat to high and cook for 1–2 minutes, tossing until the rice is hot and the ingredients are well combined.
Notes
The source specifies day-old rice but does not provide additional storage or reheating instructions. The source says to cook the rice and sauce together on high for 1–2 minutes.
