Ingredients
- 500 g chicken breast or chicken thigh (diced)
- 1 red bell pepper (cut into pieces)
- 1 yellow bell pepper (cut into pieces)
- 1 leek (thinly sliced into half-rings)
- 1 red onion (finely chopped)
- 250 g mushrooms (sliced)
- cashews (a handful of unsalted cashews, chopped; also use as a garnish)
- fresh cilantro (as needed; for garnish)
- 1 el oyster sauce (hoisin or teriyaki sauce can also be used)
- 2 el honey (or 2 tbsp Sukrin White for diabetics)
- 10 g grated ginger
- 0.5 tl chili powder
- 1 tl rice vinegar
- 2 el soy sauce
- 4 garlic (cloves, pressed)
- 2 el ketjap manis
- 1 el ginger syrup
- pepper (to taste)
- salt (to taste)
- rice, bami, or mie noodles (of your choice; cook separately)
- egg noodles (optional; add to the slow cooker during the last 40 minutes)
- all-purpose thickener (optional, to thicken the dish when rice or something similar is cooked separately)
Steps
- 1
Cut the chicken into cubes. Cut the red and yellow bell peppers into pieces, slice the leek into thin half-rings, and slice the mushrooms. Finely chop the red onion.
- 2
Press the garlic and grate the ginger. Mix the oyster sauce, honey (or Sukrin), ginger, chili powder, rice vinegar, soy sauce, pressed garlic, ketjap manis, and ginger syrup to make a marinade.
- 3
Place the chopped red onion in the bottom of the slow cooker.
- 4
Distribute the diced chicken over the onion.
- 5
Place the red and yellow bell peppers, leek, and mushrooms on top of the chicken.
- 6
Pour the prepared marinade over the ingredients in the slow cooker.
- 7
Cook for 4 hours on the low setting.
- 8
For the egg noodle option: add the noodles during the last 40 minutes. Stir somewhat more frequently so everything is coated with the marinade; the noodles will absorb liquid.
- 9
If serving rice, bami, or mie noodles separately, cook them separately. You can thicken the dish with a little all-purpose thickener.
- 10
Season to taste with pepper and salt.
- 11
Spoon onto plates and garnish with chopped cashews and fresh cilantro. Serve with the chosen rice or noodles.
Notes
The source does not specify quantities for the cashews, cilantro, pepper, salt, serving noodles, or all-purpose thickener. It is unclear whether the handful of cashews should all be added to the slow cooker; the text mentions them both among the ingredients and as a garnish. Sukrin White is mentioned as an alternative to honey. Hoisin or teriyaki sauce can replace oyster sauce.
