Ingredients
- 4 thin-sliced chicken breasts (Leave whole)
- 1.5 lb baby gold potatoes (Quartered)
- 1 packet ranch seasoning
- 1 packet au jus gravy mix
- 1 can cream of chicken soup
- 0.5 cup chicken broth
- 4 oz cream cheese (Cubed)
- pepperoncini peppers (6–8 peppers)
- 0.25 cup pepperoncini juice
- black pepper (To taste)
- cooking spray or oil (For greasing the 9 × 13-inch baking dish)
Steps
- 1
Preheat the oven to 400°F (200°C). Grease a 9 × 13-inch baking dish.
- 2
Add the whole thin-sliced chicken breasts and quartered baby gold potatoes to the prepared baking dish.
- 3
In a separate bowl, whisk together the cream of chicken soup, chicken broth, ranch seasoning, au jus gravy mix, and pepperoncini juice until the mixture is smooth and fully combined.
- 4
Pour the soup mixture evenly over the chicken and potatoes.
- 5
Top the casserole with the cubed cream cheese and pepperoncini peppers.
- 6
Cover the baking dish tightly with foil and bake for about 40 minutes.
- 7
Remove the foil and stir the creamy sauce around the chicken and potatoes.
- 8
Continue baking uncovered for another 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are fork-tender.
- 9
If the chicken reaches 165°F before the potatoes are tender, remove the chicken from the dish and return the potatoes to the oven until fork-tender. Add the chicken back to the dish before serving.
- 10
Let the casserole rest for about 10–15 minutes before serving so the creamy sauce can thicken.
Notes
Cooking time can vary substantially depending on the thickness of the chicken, the size of the potatoes, the baking dish, and the oven. To help ensure tender potatoes, partially cook them before adding the chicken, or use the chicken-removal method described in the directions. The source does not specify the amount or type of fat used to grease the baking dish.
