Ingredients
- 1 lb Puff pastry (Homemade or high-quality store-bought)
- 0.5 cup Granulated sugar (For rolling and coating)
- Salt (A hint, to taste)
Steps
- 1
Prepare your work surface by sprinkling a generous amount of granulated sugar over it instead of flour.
- 2
Place the puff pastry dough onto the sugared surface and sprinkle more sugar on top of the dough.
- 3
Roll the sugar into and around the dough using a rolling pin until the dough is a rectangle and well-coated.
- 4
Shape the palmiers by folding the sides of the dough inward toward the center to create the classic butterfly or palm leaf shape.
- 5
Slice the folded dough into individual cookies and place them on a baking sheet.
- 6
Bake in the oven until the sugar melts and creates a thin, glossy, crunchy caramel shell on the outside of the pastry.
Notes
The author notes that while homemade puff pastry (pâte feuilletée) is preferred for the best flavor and layers, a good store-bought version works well. Resting times are critical in pastry and should not be skipped to ensure the best results. The author prefers smaller, supermarket-sized palmiers for maximum crunch.
