Ingredients
- 1 lb ground chicken or pork
- 0.5 cup green onions (chopped; additional sliced green onions are used for garnish)
- 6 garlic (cloves, minced)
- 3 tbsp soy sauce (for the filling)
- 1 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 2 tbsp chili crunch (for the filling)
- 1 tbsp fresh ginger (grated)
- 1 tbsp oyster sauce
- 18 wonton or dumpling wrappers (use 18 to 24 wrappers, depending on the size of the dish; approximately 6 per layer was used in the source)
- 2 tbsp chicken stock (or water)
- soy sauce (for garnish, to taste)
- chili crunch (for garnish, to taste)
- green onions (sliced, for garnish)
- sesame seeds (for garnish)
Steps
- 1
In a large bowl, combine the ground chicken or pork, chopped green onions, minced garlic, soy sauce, rice vinegar, toasted sesame oil, chili crunch, grated ginger, and oyster sauce. Mix with your hands until just combined.
- 2
Set up a steamer over a pot of gently boiling water. Alternatively, place a heat-safe rack or trivet inside a large pot. Use a baking dish that fits comfortably inside with the lid closed; an 8-by-8-inch dish was used in the source. Keep the water level below the baking dish.
- 3
Briefly dip each wonton or dumpling wrapper in water for 1–2 seconds. Arrange a layer of wrappers across the bottom of the baking dish, overlapping them as needed to cover the bottom completely. About six wrappers were used per layer.
- 4
Spread a thin layer of the meat mixture over the wrappers.
- 5
Repeat the wrapper and meat layers until the ingredients are used. The source made four layers, but the number may vary depending on the dish. Finish with a final layer of wrappers.
- 6
Pour the chicken stock, or water, evenly over the top.
- 7
Carefully place the baking dish in the steamer. Cover and steam over a gentle boil for 20–22 minutes, until the meat is cooked through and the top is glossy.
- 8
Finish with soy sauce, chili crunch, sliced green onions, and sesame seeds. Slice the dish like lasagna and serve.
Notes
The source describes this as taking under 15 minutes to make, but also specifies 20–22 minutes of steaming; the total time here includes preparation and steaming. No internal temperature was provided; confirm that the ground meat is fully cooked before serving.
