Ingredients
- 0.5 Chorizo (Half a chorizo; some is blended with the butternut squash and the rest is used for garnish. The size is not specified.)
- 0.5 Butternut squash (Half a butternut squash, cut into small cubes.)
- 2 verres Risotto rice (The volume of the glass is not specified.)
- 1 L Chicken stock (Add one ladleful at a time.)
- 1 Onion (Thinly sliced or finely chopped.)
- 1 c. à soupe Crème fraîche (Blend with the butternut squash and a little chorizo.)
- Salt (A little, to taste.)
- Pepper (A little, to taste.)
- Olive oil (For coating the rice; quantity not specified.)
- White wine (For deglazing; quantity not specified.)
- 30 g Butter (Stir in off the heat.)
- 30 g Parmesan (Stir in off the heat; reserve a little Parmesan for serving, quantity not specified.)
Steps
- 1
Cut the butternut squash into small cubes. Also cut the chorizo into pieces and finely slice the onion.
- 2
Brown the chorizo in a frying pan without any added fat. Once well browned, set it aside.
- 3
In the same pan, cook the onion and butternut squash cubes covered, gently, until tender. The cooking time is not specified.
- 4
Season the butternut squash and onion mixture with a little salt and pepper.
- 5
Place the butternut squash and onion in a blender. Add a little of the reserved chorizo and the crème fraîche, then blend until very smooth. Set this cream aside.
- 6
In a frying pan, heat a little olive oil and add the risotto rice. Toast it until translucent.
- 7
Deglaze the rice with the white wine and let it reduce completely.
- 8
Add the chicken stock one ladleful at a time, allowing the rice to absorb it gradually, until the risotto is very creamy.
- 9
Add the butternut squash and chorizo cream to the rice, then continue cooking for a few minutes.
- 10
Remove the pan from the heat. Add the butter and Parmesan, then mix well.
- 11
Serve the risotto with the reserved grilled chorizo and a little Parmesan.
