Ingredients

  • 1 tbsp oat flour
  • 2 tbsp unsweetened cocoa powder (can substitute 1 tbsp with Chocolate Moon Mylk)
  • 4 tbsp egg whites
  • 1 tbsp unsweetened almond milk
  • 1 tsp baking powder
  • 1 tbsp natural sweetener (e.g. stevia or monk fruit)
  • chocolate chips (optional, for topping)

Steps

  1. 1

Add the oat flour, unsweetened cocoa powder, egg whites, unsweetened almond milk, baking powder, and natural sweetener to a small bowl or ramekin.

  2. 2

Mix the ingredients thoroughly until the batter is smooth and no lumps remain.

  3. 3

Pour the prepared batter into a lined baking dish.

  4. 4

Top the batter with chocolate chips if you are using them.

  5. 5

Air fry or bake in a preheated oven at 180°C (350°F) for 8–10 minutes, or until the top is set and the center is just cooked through.

  6. 6

Remove from heat and let the cookie cake cool for 2–3 minutes before enjoying.

Notes

For an extra treat, top with a spoonful of Greek yogurt or sugar-free vanilla ice cream. You can substitute 1 tbsp of cocoa powder for Chocolate Moon Mylk for added relaxation benefits.
