Ingredients

  • 1 tbsp ghee
  • 0.25 cup mixed nuts (chopped (cashews, pistachios, almonds))
  • 0.5 cup vermicelli (broken into small pieces)
  • 1 L full fat milk
  • 5 dates (chopped)
  • 0.25 cup sugar (for caramelizing)
  • 0.5 tsp cardamom powder

Steps

  1. 1

Heat 1 tablespoon of ghee in a pan and fry the chopped mixed nuts until they are golden and fragrant. Remove and set aside.

  2. 2

In the same pan, add the vermicelli and roast until it turns a deep golden brown.

  3. 3

Pour in the milk and add the chopped dates. Stir well and bring the mixture to a boil.

  4. 4

Lower the heat and let the milk simmer for 10-12 minutes until it thickens slightly and the vermicelli is cooked.

  5. 5

In a separate small pan, add the sugar and heat it on medium-low without stirring until it melts and turns into a deep amber caramel.

  6. 6

Carefully pour the hot caramel into the simmering milk mixture. It will sizzle and may harden initially, but keep stirring until it dissolves completely.

  7. 7

Add the fried nuts and cardamom powder to the pot.

  8. 8

Cook for another 2-3 minutes until the sheer khurma is silky and well-combined. Serve warm or chilled.

Notes

The caramel gives this traditional dessert a unique smoky sweetness and a rich color. Be careful when adding caramel to the milk as it will steam and bubble vigorously.
